Engagement Party

Janet and Wesley had an Engagement Party for Chase and Jessie on March 12th at Tall Pines. The weather was perfect. They had grilled hamburgers with all the fixings and beans and potato salad. Mother and I helped by making desserts. Mother made strawberry pies, buttermilk pies, banana pudding, peanut butter cookies, pecan tassies (see recipe below) and banana bread. I made mini turtle cheesecakes, heart sugar cookies decorated in their wedding colors of pink and purple, and sugar cookies shaped like engagement rings with the wedding date of 9-24-11. And we also made a cookie cake.

I made the engagement ring cookie cookie cutter by first cutting the shape out of wood on my scroll saw.  Then Randall bent
aluminum around the wood to form the cookie cutter. 






















PECAN TASSIES

1 3-oz cream cheese (room temp)
½ cup butter (room temp)
1 cup sifted flour
1 egg
¾ cup brown sugar
1 Tbsp softened butter
1 tsp vanilla
Dash salt
3/4 cups pecans (chopped)
PASTRY
Blend together butter and cream cheese until well combined and smooth, stir in flour, chill about 1 hour.  Shape in 2 dozen 1 in. balls and place in mini muffin tins.  Press dough evenly on bottom and around sides of pan,
PECAN FILLING
Beat together the egg, brown sugar, 1 T butter, vanilla and the salt until smooth. Divide half of the pecans among the pastry lined pans ( Mother puts the pecans directly into the egg mixture and sometimes a pecan half on top).  Add egg mixture and top with remaining pecans.  Bake in slow oven, 325 for 25 minutes or until set.  Cool before removing from pans.
